Every public table at Deer Valley East Village this fall sits inside one of two hotels. The plaza, the food halls and the more than 70 shops and restaurants that will eventually make this a village are scheduled for late 2027 and 2028. Until then, Grand Hyatt Deer Valley and the new Canopy by Hilton Deer Valley do the job a village square usually does, and they keep hotel hours. That changes how you plan a night out above the Jordanelle. You need a weekday plan, because on some nights one hotel has the base area mostly to itself.
Two Lobbies Are Standing In for a Village Square
Canopy by Hilton opened in late August and became the second hotel at the East Village base, according to the Park Record. Hilton gives September as the official opening date. The Grand Hyatt was already open by spring and running community programming, TownLift reported in May.
Between them, the two hotels run about a dozen places to eat and drink. Hilton describes all four Canopy concepts as meant for hotel guests and the local community. The Grand Hyatt's Hidden Ace bar says outright that locals are welcome. For a base area still mostly under construction, that's the whole public scene right now, and it runs on two different weekly clocks.
Canopy's Four Rooms Run on a Shoulder-Season Schedule
Executive Chef Scott Rackliff runs the Canopy kitchens. Before this job he worked at Eleven Madison Park in New York and led the culinary program at Paséa Hotel and Spa in Huntington Beach. He developed the two Italian concepts with consulting chef Daniele Uditi, founder of Pizzana in Los Angeles.
Tavolona means "big table." Rackliff told the Park Record it's "inspired by what might be served at your Italian grandmother's house." The menu runs from antipasti to secondi, with cacio e pepe, a bone-in pork chop with apple mostarda, white wine-lemon butter branzino, and a chicken parmigiana he calls one of the most popular dishes so far. Reservations are at tavolona.com or 435-731-9120.
Fornetto means "little oven." It's the lobby sports lounge, serving fried ravioli, polenta fries and a meatball smash burger made with house-made meatballs. Its beer list includes Utah breweries T.F. Brewing and RoHa, per Gastronomic SLC.
Mountain Provisions is the café and general store. It pours Park City Roasters coffee and sells house-made pastries, sourdough breakfast sandwiches and grain bowls, and it's open daily from 6 a.m. to 6 p.m.
Alpine Attic is the rooftop lounge, open since Aug. 21. Dishing Park City lists raclette nachos topped with bison birria and a grilled elk burger with melted raclette among its menu highlights. For now it's open only Friday and Saturday, 4 to 11 p.m., and Canopy says the days and hours will expand for winter.
The Park Record's Oct. 10 story lists Tavolona and Fornetto dinner from 5 to 10 p.m., Tuesday through Saturday, with Tavolona also serving breakfast and lunch from 7 a.m. to 2 p.m. The hotel's opening press release listed slightly different hours. Schedules are still settling this shoulder season, so call ahead before a weeknight visit.
Rackliff told the Park Record he wants the restaurants to be a "gathering place" for locals and visitors alike. "Our goal is to welcome the Park City and surrounding communities into our new home and to create memories together," he said.
The Grand Hyatt Covers the Nights Canopy Is Closed
The older hotel has the wider schedule. Hyatt's dining page lists these hours:
- Remington Hall, the signature American restaurant, serves breakfast daily from 7 to 11 a.m. and dinner daily from 5 to 9:30 p.m.
- The Lounge at Remington Hall serves lunch daily from 11:30 a.m. to 2:30 p.m. and keeps the bar open until 11 p.m.
- Hidden Ace is a 21-and-over speakeasy with cocktails, food, live entertainment and magic, open Tuesday through Saturday from 5 to 11 p.m.
- Sushi by Scratch Restaurants: Park City is a 21-and-over omakase counter with seatings at 5:00, 7:15 and 9:30 p.m., Wednesday through Sunday.
- The Living Room serves artisan hot chocolate and pastries daily from 2:30 to 4:30 p.m. and light bites from 5 to 11 p.m. Its High Chocolate service needs a reservation 24 hours ahead.
- Double Blacks, the café by the ski lockers, serves coffee and comfort food daily from 6 a.m. to noon.
Put both hotels' published evening hours side by side and the week has a clear shape.
| Evening | Canopy by Hilton | Grand Hyatt |
|---|---|---|
| Monday | Dinner rooms dark | Remington Hall, The Lounge, The Living Room |
| Tuesday | Tavolona, Fornetto | Remington Hall, The Lounge, The Living Room, Hidden Ace |
| Wednesday and Thursday | Tavolona, Fornetto | Everything above, plus Sushi by Scratch |
| Friday and Saturday | Tavolona, Fornetto, Alpine Attic | Everything above |
| Sunday | Dinner rooms dark | Remington Hall, The Lounge, The Living Room, Sushi by Scratch |
Friday and Saturday are the only nights when every evening venue at the base area is open. On Sundays and Mondays, Canopy's café closes at 6 p.m. and dinner at East Village means the Grand Hyatt. A Sunday omakase or a Monday steak works fine. A Monday pizza at Fornetto doesn't, at least until the winter hours come in.
Between Now and Dec. 5
The next six weeks are the last stretch before ski traffic. Deer Valley has announced a public opening target of Dec. 5, 2026, conditions permitting. That's also the season when the new Hail Peak Express is planned to start carrying skiers from East Village onto new terrain. Until then, the Grand Hyatt's experiences calendar has a few dates that reach past hotel guests.
- Friday, Oct. 30. Spooky Summit Cinema Night screens Hocus Pocus at 8:30 p.m. with refreshments, candy, popcorn and favors for kids. Hyatt lists it as free for hotel guests and locals.
- Saturday, Oct. 31. Halloween family programming includes a $15 potion-making activity and a $10 candle workshop. Several of the weekend's extras, including the free s'mores, are listed as hotel-guest benefits, so check the listing before you go.
- Monday, Nov. 2. Marigold Tribute is a Día de los Muertos paper-marigold craft for children at Camp Hyatt. The listing doesn't say whether it's open to families who aren't staying at the hotel, so ask when you book.
- Thanksgiving. Remington Hall lists A Grand Thanksgiving Feast, a three-course holiday menu with a choice of turkey, prime rib or celeriac steak. The listing doesn't print a service time yet.
At Canopy, the change to watch is the winter expansion of Fornetto and Alpine Attic. Hilton has promised more days and longer hours for both without giving a start date.
When the Village Moves Out of the Lobbies
The two-hotel setup has an end date. In September, KPCW reported the build-out schedule, and Deer Valley's own Hail Peak announcement set dates for the resort's new lodges.
| Timing | What opens |
|---|---|
| Late 2027 | Pedestrian plaza, first commercial spaces, Four Seasons residences, East Village Lodge |
| Winter 2027/28 | East Village Lodge with ski school, rentals and a food hall, plus Park Peak Lodge and its Live Fire Food Hall |
| 2028 | Four Seasons hotel tower, Waldorf Astoria Deer Valley, the first phase of the Cormont residences, more than 70 shops and restaurants |
| Start of the 2028 ski season | The Marcella at Deer Valley neighborhood |
| By 2030 | The remaining residential and retail space |
Once the plaza opens in late 2027, there will be somewhere to gather at East Village without walking through a hotel lobby. The food halls follow in winter 2027/28, and the more than 70 shops and restaurants are scheduled for 2028. Deer Valley East Village calls the finished project the first new alpine village built in North America in more than 40 years. Until late 2027, East Village means Tavolona, Fornetto, Mountain Provisions, Alpine Attic and the Grand Hyatt's six rooms, open on the schedules above.
East Village is one of the fastest-changing corners of greater Park City, and we follow it opening by opening because so many of our clients live nearby or are deciding whether to. If you'd like to know how the new base area is starting to affect home values along the Jordanelle, Mountain Lux Realty is happy to walk you through it over coffee, maybe at Mountain Provisions.
